Baked Oatmeal Apple Cardamom

This baked oatmeal dish is great for a large gathering at a winter breakfast. The kitchen is warmed by the oven, and the aroma of baked oatmeal, apples, cinnamon, and cardamom, will have everyone asking, “When do we eat?”

Oatmeal bake

4 cups thick cut oats

3 cups unsweetened soy or almond milk

1¾ cups lite coconut milk (or 1 403 mL can)

½ cup water

¼ cup maple syrup

¼ cup golden raisins

¼ cup chopped almonds (skins removed) or walnuts (optional)

1 teaspoon salt

1 teaspoon finely ground cardamom

1 teaspoon cinnamon

1 teaspoon vanilla

1 diced apple (skin peeled off)


Heat oven to 350 degrees. Add oats and raisins to a 9 x 13 glass casserole dish. Combine liquids, salt, and spice ingredients (set aside diced apple) in a bowl and whisk for 15 seconds. Pour liquid over the oats. Sprinkle the chopped nuts (if using) and diced apple on top; cover with tinfoil, and place into oven.  Bake for about 50-55 minutes, or until oats and apples are soft and cooked. Remove from oven and let “rest” for 8-10 minutes.  Serve with nut milk or plant-based yogurt.

Makes 8 ¾ cup sized servings
