Finnish Beet Salad

This Finnish beet salad is better known as rosoli or punajuurisalaatti — literally translated as red root salad. It’s a delicious combination of root vegetables: beets, potatoes, and carrots. Variations of the salad also include adding tart apple and pickle to this dish. As a boy, I grew up eating rosoli often at home and at almost every Finnish gathering–there were many throughout the year: birthdays, weddings, Christmas, and after church potlucks.

The recipe is easy: boil 4 medium sized potatoes, 4 medium sized beets, and 4 carrots in a large pot until soft. Peel the skins off the vegetables and cut into a medium dice (1/2 inch cubes). Add a diced onion, a peeled tart apple that’s chopped into a medium dice, and a diced pickle. Add salt to taste. Gently toss and chill for several hours.  Serve with vegan mayo. Add a dollop of mayo on top of the salad. This dish is typically served as a side.
